Sweet Potatoes

Tonight was family dinner night, a tradition that I began a few months ago. Basically every Sunday my family in Cleveland will rotate dinner around to each others house and it’s worked pretty well so far. Tonight it was my turn to host dinner.

It’s always difficult to try and come up with something to make that is different or at the very least wasn’t something made recently. Tonight I was looking through Betty Crocker’s New Choices for Two cookbook and ran across two healthy and tasty dishes that I made this evening. The main course was Olive Paprika Penne which had green, pimento-stuffed olives instead of the usual black. For the side dish I made Parmesan Sweet Potato Rounds. Both were very well received.

I’ll be waiting for my Food Network contract to come in the mail.
